With garlic, like many edible members of the allium family, what you want is what you can’t see: the bulb that’s growing underground. But don’t overlook the green shoots the plant puts up before harvest—elegantly spindly and intense with flavour, they’re just asking to be featured in a seasonal meal. Roast your garlic scapes with potatoes to add to creamy-crisp lettuce as an accompaniment to breaded chicken thighs seasoned with our Maryland-inspired Down by the Bay spices (a mix of celery salt, bay leaf and spices) and decadent lemon-caper butter.
